Green Chile Chicken Skillet

My new year's resolution for 2012 is to start a menu board with all of my dinners planned out for the month.  Needless to say I have started the hunt for recipes a bit early.  In doing so I have recently become addicted to pinterest and foodgawker, both great websites for recipe ideas!  My first recipe to try from pinterest was green chile chicken.  This recipe was incredibly easy as everything can be made in a cast iron skillet, with the exception of the rice.  Here is the recipe, minus a picture because I was going to wait to start posting recipes until after January 1st, however, I thought this was just too good not to share!

1 package boneless, skinless chicken breasts
1 small can green chiles
1 can cream of chicken soup
1/2 cup sour cream
1/2 cup water

I dredged the chicken in flour and pepper before browning, but this step can be skipped.  Brown the chicken in a cast iron skillet on medium high heat.  Add 1/2 cup water, 1 can cream of chicken soup, and green chiles.  Mix together and bring to a boil.  Reduce heat to a simmer and bring to a boil for 5 minutes or until the chicken is cooked.  Stir in 1/2 cup sour cream and simmer for 5 minutes.  Serve over white rice and enjoy!
